Decadent Chocolate Chai Madeleines
  1. Preheat your oven to 350F/ 175C. Lightly spray your madeleine baking tray with pan release spray, sprinkle with sugar. Shake off excess sugar, set tray aside
  2. In a medium sized mixing bowl combine milk, sugar, vanilla, Matcha mix, Oil, Egg and Baking Powder
  3. Whisk well to combine and dissolve sugar.
  4. Scale flour, add to wet ingredients, stir well and briefly to a smooth batter – do not over mix.
  5. Allow batter to rest/hydrate for 5minutes.
  6. Using a small scoop (or spoon) fill each madeleine cavity with batter.
  7. Push madeleines into the oven at 350F/175C using center rack
  8. Bake for approx. 7-10minutes or if Madeleines are just firm to the touch.
  9. Using heat resistant oven mitts, carefully remove madeleine tray from oven. Set on cooling rack.
  10. Keep Madeleines in tray for 5min, then flip over tray and knock out onto wire rack to cool off ( if they last that long!!)
  11. Generously dust madeleines with icing sugar and some decadent chocolate Chai mix.
  12. Serve with pineapple jam, whipped cream or just enjoy with a hot cup of Tea-Squared Premium Tea or New Matcha Tea Latte!

You will need:
A mixing bowl, a whisk, madeleine baking mold, cooling rack, small scoop
Additional Decadent Chai Latte mix for ‘dusting’
